On my weigh down!

Hi all! Want to say thank you to everyone I met at the meeting Tuesday! You are wonderful and inspirational! I loved hearing about your journeys so far. Hearing what you were cooking was also very important to me as I am not very creative in the kitchen!

I tend to be on the quiet side, mostly because I am used to hiding because of how I feel about my weight (and also because I am usually just plain exhausted.) I don’t want to feel like I need to hide any longer. It’s taking a lot for me to share that with you but I think I need to.

I have been overweight most of my adult life, with the exception of 6ish years in my 20’s when I ran the bleachers at the local high school track twice a day, rain or shine, no matter what. Best. Feeling. Ever. (!!!) I can’t do that anymore with my weary old knees but I am soooo looking forward to feeling better so I can move this body of mine and participate so much more in life. I want to do so much with my kiddos.  Basically I want to DANCE again…in the living room…with the kids…out with friends (haven’t done that in over a decade for sure!)

Looking for more info on Instapot vs. crock pot cooking. I have a large crock pot and really want an InstaPot but won’t be able to buy one for quite a long time. If you have any ideas or suggestions, I would love to hear them!

    Fun fact: the instant pot will also do slow cooking. We use it mostly for beans and lentils these days – we’re not having much rice. Ours is off-brand (didn’t buy it ourselves), but I know that for the pot insert, there are two types. Non-stick and stainless. We have non-stick, wand that is quite useful, except that without using oil, I kind of feel like we’d be just as well off with stainless.
